Nest of Zucchina Lagenaria


- 1 long zucchini
- 1 onion
- 300 gr of sheep ricotta
- extra virgin olive oil 
- salt
- black pepper 
- cinnamon as needed
- chopped toasted almonds

Nest of Zucchina Lagenaria


Peel the zucchini, cut in half, and remove the white part. Cut it lengthwise in thin strips. Warm up the oil in a pan, cut the onion, add salt and once it sweats add the zucchini and cook for 10 minutes. Once the mixture is blended and flavoured, add pepper, and remove pan from flame. Spread the ricotta seasoned with a pinch of cinnamon on the base of the dish with a spoon, place the zucchini over it forming a nest. Garnish with the chopped toasted almonds.
