Carrettiera busiate with zucchini greens
FOR THE PASTA
- 500 gr of durum wheat flour
- water as needed
- a buso or a wooden skewer
FOR THE CONDIMENT
- half a bunch of zucchini greens
- 10 cherry tomatoes
- one garlic clove
- 5 basil leaves
Knead the flour with warm water. Mould the dough into long breadstick strips and cut into 10 cm sections. Take the skewer and wrap one section of the dough strip. Allow the dough to properly stick to the skewer, then remove it and dry pasta.
Chop cherry tomatoes and season with olive oil, salt, crushed garlic clove and chopped basil. Boil the water and cook zucchini greens cut in small pieces. Use the same water to cook the busiate (curled pasta), strain and season with the cherry tomatoes previously prepared. Add cheese to taste or aged ricotta.
