Third episode of Mandra Chef Online with Feudo dei Fiori

Feudo dei Fiori, the star of the third episode of Mandra Chef Online, aired on Wednesday May 20th, 2020 on our Facebook page, Mandrarossa Wines. A special wine that celebrates Mandrarossa’s 20th anniversary, a tribute of the soul and character of our first wines. Originally produced as a single variety Chardonnay, today, Feudo dei Fiori is offered with a new image and as an innovative blend of mainly Vermentino, Chardonnay and Sauvignon Blanc.
For this episode, Valeria Raciti chose to prepare a “spring squid” dish, steamed with lemon leaves, potatoes, asparagus and a gourmet mayonnaise with squid ink, oranges and wild fennel. With its straw-yellow colour and slightly greenish reflections, subtle and delicate notes of citrus, white flowers and lemon balm, Feudo dei Fiori perfectly pairs with Valeria’s dish.
Andrea Lo Cicero wanted to pay homage to Feudo dei Fiori and our 20th year anniversary with a "salmon roll", with an herb flavoured goat cheese ricotta filling, topped with chopped toasted hazelnuts on a tomato carpaccio and cream with caviar. A complex but refined dish, ideal when paired with this full-bodied wine, fresh and persistent with a pleasant sapidity.
Both of our food lovers chose fish as the main ingredient of their dishes. In fact, Feudo dei Fiori, with its fresh and dry flavour, featuring a pleasant sapidity and good persistence, perfectly pairs with fish dishes, seafood pasta dishes and starters.
The blend of 50% Vermentino, 25% Chardonnay and 25% Sauvignon Blanc gives this wine an innovative profile that expresses, thanks to the refined floral notes, all the emotion that Mandrarossa wanted to share after 20 years of experience, work and innovation.
